Brunch on a Budget

Picture this: It's a Saturday morning and you've got a free day on your hands. The normal breakfast is just not your thing today, you're craving something else. Since there is still a pandemic going on, a normal Boozy Brunch day just isn't gong to cut it. So what on earth can we do to bring brunch back home... Keep reading!

I am all about trendy with ease. This recipe, although I did eat all 6 muffins (not in one day!) this is not my typical "Single Girl Serving" meal, you can make as many or as little as you may want. I ended up only having 5 eggs leftover so I did only make 5 muffins then one just ham and cheese, without the egg. If you have a muffin tin, eggs, cheese, ham (or bacon), bread of some sort, and veggies, you really can make one tasty brunch style breakfast for one!


To start, I suggest you prep all of your ingredients for ease to put it all together. I did buy a bread bowl from Panera previously, but any type of bread you wish to use is totally fine as well! I used onion, ham and cheese for my muffins but please feel free to add peppers, spinach or really anything else you may want to!


TO PREP:

First, preheat your oven to 375 degrees!! Then, dice the veggies and set aside for now. Do the same for the cheese and the ham. I chose to place them in small bowls just to have ready when it came time to combine in the muffin tin. And lastly, cut up the bread into medium and small squares.


I used a non-stick muffin tin but if you are not, be sure to spray it so the muffins don't stick. Begin by pressing - hard - the bread into the muffin tins until they form almost a cup-like shape. Since I love cheese, I chose to put some in first then again on top. I did also use deli cheese slices that I just cut up but feel free to use shredded cheese if you prefer.





Do the same for the ham or bacon. Then I added the egg into each cup before topping off with the rest of the cheese. Pop these in the oven for 15 minutes, or until the bread is crispy and the eggs are cooked to desired style.


THE SIDE:

While the muffins were cooking, I chose to make some home fries in the air fryer!! Since getting my Air Fryer (I bought it from Amazon and you can get yours here), I use it for everything that I can!!


To start, I washed and diced my potato. Then you want to make sure that you really soak the water out of the potatoes. Otherwise, they will take FOREVER to cook or they will be soggy and I prefer my potatoes to be crunchy!! After you have dried them off, add a little olive oil then your favorite seasoning. I just used simple garlic powder for mine. Pop them in the air fryer for about 15 minutes, or until cooked to desired crispiness.



**Note, you will want to stir them up half way through so they don't stick.**


Once they are cooked, the muffins should be out of the oven as well! All that is left to do is plate and enjoy! I plated on a small bowl dish and I had ketchup on the side! And we all know that a brunch isn't a brunch without a mimosa, so of course I had one, or 4, as well!


Brunch is usually a time to see friends, get drunk, and have fun. During these times, it is more important than ever to be safe and take care of yourself and your loved ones. I hope this recipe can brighten your weekend and allow you to make your own little Brunch on a Budget at home!!
